As you can imagine, rice is part of the staple diet in Nicaragua. Do you know that the country produced around 290,000 tonnes of rice in 2022?
At dragon’s garden, we grow organic rice. In 2022, thanks to favorable weather, we managed to harvest twice from the same plot. And we are very proud to be able to serve you this rice in our restaurant, for example gallo pinto for breakfast.
Gallo Pinto is the traditional rice and beans dish in the Nicaragua, but also Honduras, and Costa Rica.
The term “Gallo Pinto” translates to “spotted rooster” or “painted rooster” in English, referring to the speckled appearance of the dish. The name itself is thought to have derived from the contrasting colors of the black beans and white rice used in its preparation. Gallo Pinto has become a symbol of national identity and pride, with each country putting its own unique spin on the recipe.
In Nicaragua , Gallo Pinto it is often prepared with red beans and flavored with local spices is seasoned with Lizano sauce,
Gallo Pinto is more than just a dish; it is a cultural symbol that brings people together. It is commonly enjoyed as a breakfast food, accompanied by eggs, fried plantains, and a side of sour cream. The combination of protein-rich beans and carbohydrates from the rice provides a satisfying and nutritious meal to start the day.
Here our recipe of Gallo pinto
Ingredients for 4 persons
2 table spoons of oil
1 cup Rice (roughly 1.5 times the amount of beans)
1 cup Beans
Salt to taste
1 Onion to taste
Preparation :
Boil dried beans with a half chopped onion and salt for 2 to 3 hours until cooked.
Fry the other half chopped onion in oil until transparent then add uncooked rice with for a couple minutes while mixing
Then add water and boil until cooked.
Heat oil in a pan and add cooked beans until the liquid that was cooked with the beans dries then add rice and fry together.
Adjust with salt
